INGREDIENTS
Salmon Tartar
You´ll need:
150g fresh salmon without skin, diced
2tsp cucumber, diced
2tsp tomato, diced
1tsp shallots, diced
1tsp chives, diced
1/4 tsp capers
1tsp lemon juice
3tsp mayonnaise
Salt and pepper (to taste)
Mango Salad
You´ll need:
1 green mango
1tsp coriander leaf (chopped)
1/2 tsp lime juice
1 clove garlic, crushed
2 chili padi
1/2 tsp sugar
1tsp fish sauce
METHOD
Salmon Tartar
1. Add diced salmon into a mixing bowl.
2. Add the diced cucumber and tomato.
3. Then add in the diced shallots, chives, capers and lemon juice.
4. Mix all ingredients and add mayonnaise.
5. Toss with the mayonnaise and season with salt and pepper.
Mango Salad
Method:
1. Peel mango and slice into thin strips.
2. Make the dressing for the salad. Mix crushed garlic, chili padi, sugar and fish sauce together.
3. Strain.
4. Toss the mango with the dressing and add in the coriander leaf.
5. To serve: place salmon tartar into a clean mould, then unmould onto a clean serving plate. Arrange mango salad atop the salmon.
6. Garnish then serve.
